Survivor night is always a treat. Once a week you can watch a bunch of starving people lie, cheat and steal to gain ground for a million bucks. Why not make a feast and really enjoy the show...make a night out of it! Here are a bunch of recipes that fit the theme. ENJOY!
These are not the traditional poppers you get in certain chain restaurants. Goat cheese will work just as well instead of the cream cheese. I suggest not using really melt-y cheese, because the bacon will shrink a bit and squeeze the peppers and you don't want to lose all your cheese to the bottom of the baking sheet. For that same reason remember not to wrap the bacon too tight...
- -cream cheese
- -lemon zest and juice
- -cilantro (chopped)
- -cumin
- -bacon strips
- -jalapenos (cut in half)
- -mix the first 4 ingredients in a bowl
- -stuff the jalapeno halves
- -wrap with bacon
- -bake in a 350° oven until golden brown and bacon is crispy
- -serve with a dollop of sour cream
I love spicy foods and I love seafood, so it seems natural to make these. You can make this on your stove or you can fire up the grill and cook them in a cast iron pan. The fire toasted garlic bread is perfect for dipping in the sauce....yum!
- -various bell peppers
- -garlic
- -Old Bay Seasoning
- -fennel seeds
- -chillies
- -prawns (shelled and deveined)
- -lager beer
- -lemon zest and juice
Chop and sautee all the ingredients together in order allowing each to cook until fragrant and garnish with the lemon zest and lemon juice at the very end.
I love coleslaw...always have. There are many different ways of making it and I've found this recipe will please any lover of this crunchy salad. The secret is the fish sauce and the peanuts, so try not to leave them out.
- -mayo
- -ketchup
- -fish sauce
- -lime juice and zest
- -sugar
- -salt and pepper
- -mix all the dressing ingredients and allow to sit in fridge for a few hours or overnight preferably
- -shred some cabbage, carrots, and fennel bulbs
- -toss with the dressing
- -garnish with some fresh cilantro, red chillies slices and chopped peanuts
- -serve immediately or allow to sit in the fridge for awhile to marry all the flavours
I haven't met many people who don't love pizza. One night I had leftover curry and wondered what to do with it. I wanted to give it new life and suddenly thought of pizza! It was absolutely delicious and here's how.
- -3 1/2 cups flour
- -1 cup warm water
- -2 tsp yeast
- -2 tbsp honey
- -1/4 cup olive oil
- -1/2 tsp salt
- -curry (click for recipe)
- -grated cheese
- -in a bowl mix yeast, water, honey and olive oil and allow to sit for 10 minutes
- -in another bowl mix the flour and salt and make a well in the centre
- -pour in the yeast mixture and mix well
- -knead on a floured surface for at least 10 minutes
- -place the dough ball in a oiled bowl and loosely cover with a damp tea towel
- -punch the dough down, cut in half and spread the dough on 2 pizza pans
- -cover with generous amounts of curry and top with grated cheese
- -bake in a 450° oven for 8-10 minutes
These perogies are the easiest things to make and the perfect way to use leftovers. I make the dough, cut it into portions and freeze it. Perogies are so versatile that you can stuff absolutely anything in them. I've made them with roast beef, chicken, sweet potatoes...limitless. Although, be sure that the stuffing you use is not too wet as this will make them leak. Not to worry, a full perogie page coming soon...
- -4 cups flour
- -1 tsp salt
- -1/4 tsp baking powder
- -2 tsp vegetabel oil
- -1 cup warm water
- -1 egg (beaten)
- -cold mashed potatoes
- -cheese (grated)
- -in a bowl mix the first 3 ingredients
- -in another bowl mix the next 3 ingredients
- -mix both together and knead for a good 10 minutes, wrap and rest for at least 2 hours
- -roll out the dough and cut out rounds
- -place a ball of filling (mashed potatoes and cheese) in the centre, dab some water around the edges, fold over and press the edges to seal well
- -toss them into boiling water for 2-3 minutes
- -then sautee them in butter with onions until gold and crisp
- -serve them hot with grated cheese and a dollop of sour cream
