WHAT!?!? How is that possible? I know there will be more than a few skeptics out there, but I have found this to be THE BEST hangover cure out there.
There's scientific reasoning behind it; when you eat spicy food, your brain thinks you're hurt and therefore begins to release endorphins, which helps numb the pain, and jalapenos supply just enough pain to make you feel groovy again.
How else do you explain the healing properties of the spicy caesar, the clams!? Another reason I think jalapenos help hangovers is that they make you sweat and sweating is good for getting rid of toxins in your system, and what is booze? Toxins!
So, here it is kids...the best hangover cure...period. Eat this breakfast with a caesar on the side, quick shower (as cold as you can bear), brush your teeth and you are right as rain again! Watch the caesars though, the buzz can creep back in and hence the pesky hangover...
Pulled Pork Benny with Jalapeno Hollandaise
In a blender:
- 3 egg yolk (room temperature)
- 1 oz warm water
- juice of 1/2 lemon
- salt and pepper
- whiz for 30 seconds
- heat butter in a sauce pan until hot and foamy (must be at least 80° to cook the yolks)
- turn the blender on and immediately drizzle in the butter
- incorporate all the butter in 20-30 seconds
- add jalapeno puree (pureed roasted jalapenos, parsley and cilantro)
toast up an english muffin (1 per person)
top with pulled pork and BBQ sauce
poached eggs (click here for tips)
pour generous amounts of hollandaise over eggs and sprinkle with paprika
I absolutely love bennies!! There is something great about the combination of egg yolk, hollandaise sauce and just about anything in the world and there's is more to them then ham, eggs and traditional hollandaise.
This recipe uses the blender, which I adore, because its virtually idiot-proof and easy. No need for clarified butter, whisking until your arm feels like it's going to fall off, the sauce separating...a pain in the ass! Just be sure the butter is hot and add it fast and steady, enough to cook the yolks and thicken the sauce. Unfortunately, this sauce can't be made ahead, you need to use it right away...
