Grilling

FIRE...what more can you say? One taste of anything cooked over an open flame will justify the quest for it in early mankind. One of the essentials, along with water and shelter, one cannot live without it. Heat and warmth and charbroiled meat. Imagine ribs without that lovely kiss of fire. BBQ is a flavour that even has vegetarians questioning their life choice. Some will tell you that charcoal is the best, wood fire is king or propane is the most convenient...they ALL rock in my opinion. No matter what, just grill it!

Ribs

RIBS

Anyone who loves ribs will love beer, and anyone who loves beer will love these beer-braised ribs. Slow cooked in a dark amber beer, cilantro, parsley and lemon. They're cooked until the meat falls off the bone, but then I throw them on the grill with my homemade BBQ sauce to get that really great caramelized char that everyone can't get enough of...sticky, sweet and completely addictive.


Campfire Burger Dog

CAMPFIRE BURGER DOG

These are the best campfire treat! I like to make them, roll them and freeze them, and then just toss them in the cooler and they thaw slowly while keeping everything cold in the meantime. When everyone else is skewering their dogs, offer them these and all will be pleasantly surprised...and you only need to bring one kind of bun, which saves room! Just stab them with a stick, like you would a weinie and cook over the open fire.

If you really want to impress someone with an unforgetable breakfast (or dinner), try this recipe. It's really easy and delicious, I promise. I'll give you one of my favourite chilli recipes that has most chomping at the bit to have some.


Cowboy Steak & Chimichurri

COWBOY STEAK & CHIMICHURRI

Beef! When you crave steak, nothing is better than this cut. It's a tenderloin with the bone left in, some may use as a "handle" and just pick it up and start gnawing. When this well seasoned steak hits the grill, you start to get excited and you can't help salivating or even foaming at the mouth and I can't think of anything that goes with this huge hunk of meat better than an herbacious and garlicky Argentinian chimichurri. Once you try this ridiculously good and easy steak sauce, you'll make every time you have steak, I guarantee it! Sometimes I make steak just to have chimichurri.



Stovetop Wings

STOVETOP WINGS

I absolutely love bennies!! There is something great about the combination of egg yolk, hollandaise sauce and just about anything in the world. I use a blender for the hollandaise, which I adore, because its virtually idiot-proof and easy. No need for clarified butter, whisking until your arm feels like it's going to fall off, the sauce separating...a pain in the ass and you won't be able to tell the difference.
