Eggs

No matter what you hear about eggs, good or bad, you can't deny how absolutely delicious they are. I love eggs any which way you can cook them. Hard boiled on a salad, or simply with salt and pepper, over easy with hot buttery toast dipped in on a hungover Sunday morining, in a light and airy soufle, or a crispy and chewy meringue. The world really does revolve around the egg.

Devilled Quail Eggs

DEVILLED QUAIL EGGS

These are the perfect little retro bite. Although you could use regular eggs, I like using quail eggs because they're one single bite...easy to make, easy to eat and you can make them a day ahead. You can season them with anything you like, but I find the curry works really well, is a bit unexpected, and the curry gives the egg yolks a really nice yellow colour.

Got leftover roast beef? Love eggs? This recipe will give new life, I promise. I love spicy food and this one delivers. The endorphins, the sweat of the brow, the runny nose...I love it all! A spicy dish lets you know you're alive, you are in the moment. You can't escape, or just eat for the sake of eating. Heat grabs your attention, doesn't give in and will not be ignored. Hungover? Sinus cold? Crank up the heat...it'll cure what ails ya!


Chilli Benny with Grainy Mustard Cream Sauce

If you really want to impress someone with an unforgetable breakfast (or dinner), try this recipe. It's really easy and delicious, I promise. I'll give you one of my favourite chilli recipes that has most chomping at the bit to have some. I really love the contrasts of the , crunchy english muffin, the soft basted egg with a runny yolk, the spicy chilli and the creamy sauce. You'll find that all the flavours and textures compliment each other really nicely.


Baked Beans, Cream Corn & Egg Phyllo

If Texans carried purses...flaky phyllo dough surrounds spicy baked beans, creamed corn and an egg with the yolk oozing out when you cut into it. Delicious! Baked beans and cream corn are so simple to make and pack a punch with flavour and the crowd pleasing wow factor.



Pulled Pork Benny & Jalapeno Hollandaise

PULLED PORK BENNY &
JALAPENO HOLLANDAISE

I absolutely love bennies!! There is something great about the combination of egg yolk, hollandaise sauce and just about anything in the world. I use a blender for the hollandaise, which I adore, because its virtually idiot-proof and easy. No need for clarified butter, whisking until your arm feels like it's going to fall off, the sauce separating...a pain in the ass and you won't be able to tell the difference.
